Why do you enjoy eating vegetarian food? The number one reason is because it is so healthy. There are so many vitamins, minerals, and phytonutrients in natural whole foods! This most certainly results in better health, and I feel much more energetic and balanced eating this way.
What is your nutritional philosophy? The closer a food is to its original form, the better. I try to make the bulk of my diet natural, whole foods. I do eat processed foods at times, though. And I do occasionally indulge. However, I have found that if I make sure I have healthy alternatives in place to satisfy cravings, I don't resort to unhealthy foods that often, and I feel don't feel like I am missing out. For instance, chocolate avocado pudding satisfies my chocolate craving on a regular basis. :)
What is your stance on soy? Generally, I usually shy away from isolated soy protein. I feel that this particular way of eating soy is quite unhealthy and msg is often formed during the extraction process.
Also, I try not to eat soy unless it is specifically labeled organic. That is because so much soy grown in the U.S. is genetically modified.
For a more in depth explanation, see My Thought on Soy.
What is your stance on phytic acid?
I think that phytic acid probably serves a healthy purpose in our diets in very moderate amounts. However, I think most of it should be removed to allow nutrients to be absorbed into our bodies effectively. For instance, I think that we should soak beans to remove the bulk of phytic acid, soak and roast nuts for the same purpose, etc.

Did you create all of the recipes on Yummy Vegetarian Delights?
Some I have created, some I tried from other sources, and some I have modified from other sources. Each recipe states whether or not it was my own creation, and if it is not an original, a link to the original is provided.
Some of my favorite recipes that I have created myself that I am particularly fond of are: Vegetable Pot Pie, Sugar Free Vegan Mochas, The Yummiest Chocolate Drink Ever, Egg Rolls, Vegetable Soup with Adzuki Beans, Sugar Free Cinnamon Raisin Oatmeal, Raw Chocolate Oatmeal Cookies, and Refried Beans and Spanish Rice.
Are you ever compensated for the products you review? Nope, never compensated. However, they are sometimes provided free of charge. This is not always the case, though, as there are plenty of products that I have reviewed simply because I liked them. :)
